Jumping Mullet

Carolina Classic Fried Jumping Mullet

Ingredients:

1 lb mullet fillets
¾ cup flour
salt and pepper to taste
veggie or peanut oil

Cover bottom of heavy frying pan ½ deep with veggie oil and heat on med high until a dash of flour bubbles the oil. Salt and pepper fish. Roll fish in flour until coated well. Place fish in pan and cook until golden brown. Do not overcook. Serve with sliced lemon wedges, parsley and sweet tea.

Grilled Mullet

Ingredients:

1 lb mullet fillets
salt and pepper to taste
olive oil
1/2 lemon
1 tablespoon freshly chopped parsley

Build a hot fire on the grill and salt and pepper mullet fillets. Drizzle olive oil over fillets and put on hot fire, turning after 2-4 minutes. Squeeze half a lemon over fillets and sprinkle with parlsey. Serve immediately.
